A delightfully classic Bugundian chard from a Chablis master with a surprising warmth up its sleeve. Fourth generation winemaker Bernard Defaix established this adored Domaine in 1959, and today his two sons Sylvain & Didier oversee the more than 27 organic certified hectares – including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys), plus others in the Chablis and Petit Chablis appellations! A quote from Didier on comparing this vintage to 2022, “…from the quality perspective also a similar esprit – both quite early vintages, maybe a bit more richness in 2023”. Planted on clayey and chalky soils, the chard sings the tune of the region like so many before it. Apricots in butter, sleeping on a hay mattress, salt crystals on your lip, lime oil on your hands, old stone wall, starfruit & the quietest bit of bitterness to seal the deal. Drink with butter noodles, yes, simply a noodle of your choice, cooked al dente, with melted butter and flakey salt to taste, xoxoxo.
