A rich n’ classic southern cab for poker nights with card counting grandmas, aunts and uncles. From a collective of winemakers in the Pays d’Oc, these robust cab sauv vines are planted on clay and limestone soils in the upper valley of the Aude. Blackberry jam, black olive mixed with green peppers, your first (and last) chocolate cigar as an experimental teen, cassis, eucalyptus & pulverized pepper. The winery recommends enjoying with a flageolet bean dish, a beloved, mild European heirloom bean that is excellent cooked with roasted tomatoes and we say, yes please!
