Co-founder of Domaine Des Griottes (2000-2010) alongside Babass, before splitting over the ultimate question, “to plow or not to plow”. Here Patrick’s resounding answer was NO WAY, NO PLOW! Sincerely practicing what he preaches, and all from the comfort of his un-electrified shack, surrounded by his ever growing wine forest™ (yes, he is training vines up trees!). Named after Patrick’s late horse, Caroline is 100% plush and unwavering, chenin blanc, from 100+ year old vines that have never known a chemical touch. Direct pressed and aged in amphorae – wisteria, sweet apples grown and cut by your grandma, sunlight through raw silk, beehive & the first wish you ever made while blowing out your birthday candles. Let Caroline sleep for a couple years and then wake her with a soft smile & tender embrace.
