A truly mysterious and multifaceted skin contact offering from Austrian royalty. Winemakers Stephanie & Eduard Tscheppe are adored by wine lovers across the world, known for their commitment to biodynamics and unfaltering pursuit of land expression through a cast of fictitious family members. For the first time in Ontario, meet Edmund! From 55-year-old, low yielding, unpruned, and UNDISCLOSED vines in an essentially wild, untilled limestone vineyard. Now we may not know the vine’s name, BUT what we do know is that the grapes are hand-harvested and destemmed, then rested on skins for two weeks, with an 18 month rest featuring no batonnage (aka no stirring of the lees). Dried apricot meets passionfruit, black tea tannins, pistachios, green olive, grilled lime, beeswax & incense. Enjoy with fennel sausages and spicy mustard!
