Pinot Blanc & Chardonnay, Moravia, Czech Republic

A textured, spiced and zero-zero skin contact that could make you believe in miracles. Richard Stávek has been a leader in natural winemaking and environment conscious agriculture since the mid-90s. He and his wife Stanislava's 15 hectares of land in South Moravia are home to vineyards, cherries, walnuts, vegetables, sea buckthorn bushes, apricots and their wood for furniture production, berries for brandy, beehives for honey and wax for bottles, animal life including goats for cheese (stop us we’re DROOOLING!), and other crops that all play their part in the biodiversity symphony they’ve cultivated. FUN FACT! Richard produces wooden staves that have been used to make the FAMOUS Austrian barrels of Stockinger! The blend of plush, orchardly pinot blanc (85%), and citric, terroir-spurred chardonnay (15%) undergoes carbonic maceration for 20 days, is then pressed by foot (!), and spends 10 months aging with stirring of the lees (1-2 times a month) to stave off stagnation. Salt cured game, roses preserved in honey, fresh bergamot, mushroom stock, spiced apple mash & mysterious, earthy minerality – like discovering the faerie kingdom of your eight-year-old dreams. Drink while sewing your first quilt, the new moon setting above you.
