A rare-treat Slovakian bubble, full of fresh fruit and flouncy florals. Charismatic and multi-talented winemakers and partners, Nadja and Andrej, perform everything from farming to fermenting entirely on their own for this passionate project. The importance for them lies in having a sincere connection to the land, while maintaining a non-intervention process, and keeping everything close to home; even aging is done in the cellar beneath their house (built in the 1600s!). Everything is whole-bunch direct-pressed, and after primary fermentation pinot gris juice is added to start a secondary fermentation in the bottle, meaning BUBBLES are naturally formed! Hand-squeezing lemons, apricot flowers, pear drops & a quince texture wrapped in creamy bubbles. Enjoy while perusing the COC 2024/2025 season, Faust, Nabucco or Madame Butterfly anyone?
