A perfectly off-dry and gentle bojo pet-nat treat! Romain des Grottes farms in the lower plains of Beaujolais (south of Brouilly), rigorously travelling down the path of natural wine enlightenment, he is guided by the highest quality polyculture farming and zero-zero winemaking philosophy. The vineyards cover about eight hectares of fully organic and Demeter certified land hosting vegetable gardens, fruit trees, grains and medicinal herbs between and around the vines. In their words, “We plant trees, hedges, and are constantly challenged to combine respect for life, ecological efficiency and economic survival”. This wee slice of paradise was bottled during fermentation, aka pétillant naturel, which allowed it to produce delicate bubbles in the bottle without any help, and left us with 65g/l of nectarous sugars that are magically in balance with a twittering acidity. Spring is in the air any time of year, earliest flowers, strawberries dunked in sugar, watermelon hard candies & pointelle bubbles. Enjoy with spicy mango salads, tamarind chutneys and fried desserts.
