A jumping-out-of-the-glass juicy and delicious sauvy b from a brand new Czech project! We are SO excited to introduce, for the first time in Ontario, the charmingly untameable, single-varietal wines of Mirka Nestarec. The answer to Mirka’s longing for the (wilder) wines of the past from her partner Milan Nestarec, their guidance of the Mirkaa vines is about as minimal as it gets. Shoots grow as close to the sun as they dare, with no trimming or cutting…in fact, rarely a human hand touches the vines. FUN FACT! Her labels are adorned by pivotal figures from her time as a dancer, with this one featuring Ruth St. Denis (1879–1968) – an American pioneer of modern dance who paved the way for other women in dance. From water retaining clay soils, the 25-year-old sauvignon blanc vines are harvested by hand, fermented with a portion of whole berries and left on coarse lees for texture and aromatic protrusions. Fresh jalapeño greenness surrounds everything, underripe pineapple plumpness, white flowers falling, lemon ice & picking the pears out of a fruit cup. Open with your barre teacher after class one Friday, take charge, make a move!
