De-stemmed and macerated for just over a week to bring out a gentle texture, the fermentation was also slow and developed a light, nuanced oxidation you can really take a bite out of. White tropical fruit delicacies, lush shells, dry herb garland, vanilla marshmallow, regal acid, a branchlette of bitters & orange blossom throughout that set our frontal lobe aflame.
