A natural approach in the cellar stewards some very small, unexpected, and relatively old vineyards of Italian grape varieties, found here. ‘Staring at the Sun’ is a blend of unequivocally aromatic moscato giallo, zesty, floral fiano, rich & tropical vermentino. Hazy, percolating C02 that invites like a welcome mat into a field of sour cucumber vegetal-ness, ginger musk, packaged dragon fruit & pearly minerality. Enjoy with sesame crusted tuna tataki, seaweed salad & pickled burdock.
