A spiced and savoury blend of an underrepresented North American red grape, and world famous white. Brand new to Ontario, join us in welcoming the fiercely farm-forward bevies of Wild Arc! Situated on 10 hectares in the Hudson Valley, operators Crystal and Todd believe that the area’s granitic soils, coupled with the influence of the Atlantic Ocean and Catskills creates a unique microclimate conducive to world-class wine production. Blackbird is a blend of peppery, syrah-esque noiret (a hybrid) and aromatic, tart riesling that were co-fermented for four weeks – their nod to beloved Northern Rhone style wines that combine syrah with white grapes like viognier, marsanne or roussanne. Blackberry concentrate, cool mint breeze, salt n' pepper steak, cacao bitterness weaves between chalky tannins, pile of rubble & a digger scooping earth. Enjoy alongside shepherds pie and wool blankets galore.
